Leur production de lait chute naturellement, voire cesse compl\u00e8tement. Cela entra\u00eene une baisse importante des volumes disponibles pour la fabrication de fromage. Si elle est saillie \u00e0 cette p\u00e9riode, la mise bas intervient en fin d\u2019hiver ou au d\u00e9but du printemps. La <strong>lactation<\/strong> commence alors, pour une <strong>dur\u00e9e moyenne de 7 \u00e0 10 mois<\/strong>.<\/p><p>Ainsi, de novembre \u00e0 janvier, la plupart des ch\u00e8vres ne produisent plus de lait : elles sont \u00ab taries \u00bb, c\u2019est-\u00e0-dire au repos. Les fromages frais, qui n\u00e9cessitent du lait en continu, disparaissent des \u00e9talages. Certains producteurs stoppent m\u00eame totalement la production hivernale.<\/p>\n<p>En revanche, dans les fili\u00e8res industrielles ou en \u00e9levage intensif, il est possible de maintenir une production en dehors de ce rythme naturel, parfois en provoquant des mises bas d\u00e9cal\u00e9es ou par l\u2019utilisation de protocoles hormonaux. Mais il faut simplement comprendre que <strong>manger du fromage de ch\u00e8vre de saison, c\u2019est aussi respecter le rythme de l\u2019animal<\/strong>. En hiver, c\u2019est l\u2019occasion de profiter de fromages plus affin\u00e9s, disponibles en quantit\u00e9 limit\u00e9e, plut\u00f4t que de rechercher les m\u00eames produits frais qu\u2019en \u00e9t\u00e9.
